menu monday...

OK this is my first attempt at trying to put together a menu for us {aka me} for the week. I am hoping this will help me actually cook/follow this! Too many nights I get home and either don't eat anything or wind up stopping and grabbing whataburger.

Monday:
-Lunch - either leftover Genghis Grill or going to the company luncheon that I got a free pass too.
-Dinner - Pioneer Woman's Sloppy Joes! {they LOOK delish}

Tuesday:
-Lunch - either the leftovers from Monday I didn't eat or a PB&J sandwich
-Dinner - my chicken, veggies & jasmine rice dish

Wednesday:
-Lunch - leftovers from Tuesday's dinner
-Dinner - pork loin, mashed potatoes and salad

Thursday:
-Lunch - PB&J sandwich
-Dinner - steak, mac 'n cheese, & some veggie

Friday:
-Lunch - Go OUT to eat! YAY!
-Dinner - Most likely snag something on my way home {maybe chicken soup from Carrabbas YUM}

So there you go...Here's hoping I stick to it! :)

Sounds YUMMY!!! I haven;t done a menu plan in a while because I'm trying to use what is in the house before we move.. can;t wait till i can start planning again LOL!! Are you on a "meal plan"? ::i refuse to use the "d" word:: Is that why you're making menus??

Hi, here is my easy, quick chicken recipe that is delicious and great for working women.

Put a little olive oil in the bottom of a baking dish and place one medium onion in slices on the bottom of the pan. Add one sliced lemon and place deboned chicken breasts on top. Add a sprig or two of rosemary (or basil leaves i you don't like rosemary). Sprinkle the top with corn flake ground to a meal (this comes in a box like cracker meal). Then drizzle a bit more olive oil on top. Bake at 350 degrees for 45 minutes, until chicken has no pink in it. You can add baking potatoes to your oven 15 minutes before the chicken goes in and if you add a vegetable or salad you have a nice meal.

I do twice the chicken and use the leftovers for chicken salad sandwiches or Chicken Caesar salad for lunch the next day. Yummy and easy.

Yum! We've been scrimping lately, I usually do a weekly menu as well but now we're eating cereal and leftovers lately. haha.
